The oil has the aroma of green almond and ripe tomato, with notes of walnut, wild thyme, peach, and a peppery finish. The texture is heavy-bodied and buttery.
This is a finishing oil par excellence that brightens salads, pastas, and cooked vegetables. It works perfectly with such dishes as hummus and tabbouleh. Mixed with za’atar, it makes a splendid dip for bread.
